I love the 4th of July. It's a day to celebrate all the things that make this country great; from the higher ideals of freedom and the representative democracy that has fostered that freedom for 233 years, to the friends and family that make freedom worth having, and worth fighting for. It's also a day to eat fun food, and I'm going to share one of my favorite patriotic recipes! Enjoy, and happy Fourth of July!

Red, White and Blue Jello

Patriotic Jello

Ingredients:

  • 1 3oz. pkg. Cherry Jello
  • 1 3oz. pkg. Raspberry Jello
  • 1 3oz. pkg. Lemon Jello
  • 1 6oz. pkg of Blue Jello
  • 1 8oz. pkg. of cream cheese (let sit on counter until soft)
  • 20 large marshmallows (or 1 c. mini marshmallows)
  • 1/2 c. pineapple juice

1. First Layer: Dissolve 6oz. package of blue jello in 2 1/2 c. hot water. Pour into 9"x 13" pan or glass dish and place in refrigerator. Let jell.

2. Second Layer: Mix pineapple juice and marshmallows in a pan over med. heat until marshmallows are melted. In a separate bowl, dissolve lemon jello in 1 1/2 c. hot water. Mix jello and pineapple/marshmallow mixture and add softened cream cheese until smooth and creamy.  Let mixture cool to room temperature.  Pour over blue layer, and place in refrigerator to jell.

3. Third Layer: Dissolve cherry and raspberry jello in 2 1/2 c. hot water.  Let cool to room temperature.  Pour over white layer and place in refrigerator until it has jelled.

This recipe also makes great Christmas jello--just substitute a 6oz. package of lime jello for the blue!

Today B was trying to teach M some knock-knock jokes. Hilarity ensued:

 

Mia: Knock-knock.

Daddy: Who's there?

Mia: Orange!

Daddy: Orange who?

Mia: Orange who?

Daddy: (chuckles) No, you're supposed to say, "Orange you gonna open the door for me?"

Mia: Open the door!

(repeat three times)

 

Much funnier than the knock-knock joke.

Perspective

Whether I'm feeling like my life is a huge success and everything is going my way, or I'm feeling overwhelmed with the duties of simultaneously being a wife, keeping a house, raising a 3-year-old and running a business; if I stop and think about the tenants of this verse, everything comes into perspective. God is great and eternal. I am small and finite. The things I tend to worry about aren't as big a deal as I sometimes imagine they are, not in the grand scheme of things.  I think that if I could keep the greatness of God in mind every second of every day, my life would hold more balance. I'm going to try that today.
